Currently I am using a Canon Rebel EOS T2i with EFS 15-55mm lense.  In earlier posts I was using a Canon point-and-shoot, and the lighting was very crappy.  You can tell!  I am still learning to use my DSLR camera, which I love.  I also try to use natural light as much as possible, although sometimes it is tough when dinner time comes around and the light is gone!  I try to make the most out of the final presentation picture, while the step-by-step ones are taken “as is”.  It is hard to set up appropriate lighting and trying not to burn food!


I constantly working on improving the wording and instructions of my recipes, especially the older ones.  Otherwise indicated, I use Kosher salt, unsalted butter and skim milk in most of my recipes.
As you may (or may not) know, a lot of Ecuadorian cuisine is “a little bit of this” and “a little bit of that”, and servings can be whatever you make them to be, depending on your appetite.  Most of my recipes will yield about 6 servings – I like leftovers!
